Potato, Quinoa & Spinach with Turkey Meatballs

What You'll Need

  • 1 lb. ground turkey
  • 1/3 C. red sweet bell pepper, diced small
  • 1/4 C. Italian parsley, roughly chopped
  • 1 egg, lightly beaten
  • 2 tbsp. parmesan cheese, grated
  • 2 tbsp. seasoned breadcrumbs
  • 1/2 tsp. poultry seasoning
  • kosher salt and ground black pepper
  • 17.3 oz carton Imagine® Organic Potato Quinoa & Spinach Soup

How to Make

  1. In a medium bowl, mix the turkey with the bell peppers, parsley, egg, cheese, breadcrumbs, poultry seasoning, salt and pepper (as desired).
  2. Form into walnut sized meatballs and place in a greased casserole dish.
  3. Bake in a pre-heated oven at 375° F until meatballs set, about 15 minutes.
  4. Pour in the Imagine® Potato Quinoa & Spinach Soup and sprinkle about 2 tbsp. cheese on top.
  5. Raise the oven heat to 400° F and continue to bake for 15 more minutes until cooked through and golden brown on top.
  6. Serve hot with additional parmesan cheese on top - either grated or shaved.
