Coconut & Almond Basmati Rice

What You'll Need

  • 2 cups Imagine® Vegetable Broth
  • 1 cup basmati rice, rinsed until water runs clear, soaked in cold water 15 minutes
  • 1 lime, zested & juiced
  • kosher salt & ground black pepper
  • 1/3 cup sliced almonds, oven toasted
  • 3 scallions, diced small, about 1 cup
  • 1/3 cup cilantro, roughly chopped
  • 1 tsp. Spectrum® Toasted Sesame Oil

How to Make

  1. In a large sauce pot, bring the broth to a boil.
  2. Stir in the basmati rice, lime zest & half the juice. Season with salt and pepper, as desired.
  3. Return to a boil, reduce heat to very low and cover. Cook 20 minutes. Allow to rest 5 minutes.
  4. Uncover and fluff with a fork. Stir in the almonds, scallions, cilantro and sesame oil.
  5. Serve hot, with an entrée dish prepared with Imagine® Thai Coconut Culinary Simmer Sauce.
