Cilantro Scented Spanish Rice

What You'll Need

  • 2 tbsp. Spectrum® Olive Oil
  • 1 small white onion, diced medium
  • 3 cloves garlic, chopped
  • 1 cup long grain white rice
  • 1 lime, zested and juiced
  • 2 cups Imagine® Organic Vegetable Broth
  • 1/2 bunch scallions, cut to 1/4-inch pieces
  • 8 cherry tomatoes, halved
  • 1/3 cup cilantro, roughly chopped
  • kosher salt & ground black pepper

How to Make

  1. Pour oil into a large saucepot. Add in the onions & garlic. Cook 4 - 6 minutes until onions are translucent.
  2. Stir in the rice and lime zest. Pour in the broth and half the lime juice.
  3. Bring to a boil, reduce heat to very low and cover. Cook 15 minutes. Allow to rest 5 minutes.
  4. Uncover and fluff with a fork. Stir in the scallions, tomatoes, reserved lime juice and cilantro. Season with salt and pepper as desired.
  5. Serve hot, with an entrée created with Imagine® Organic Latin Veracruz Culinary Simmer Sauce.
