4 C. Imagine® Organic Vegetable Broth or Imagine® Organic Chicken Broth
3 tbsp. unsalted butter
1 C. shiitake mushroom caps only, sliced
½ C. chives, chopped into 1″ lengths
Hain® Sea Salt and freshly ground coarse black pepper to taste
½ cup grated Parmesan
1 tsp. Spectrum® Olive Oil
How to Make
Cook orzo according to package directions, exchanging the water for broth.
Cook until just tender. Drain orzo, toss in olive oil and keep warm.
In a large skillet melt the butter over a medium high heat and sauté mushrooms until tender, about 3 minutes.
Add the orzo and chives to the mushrooms.
Season to taste, sprinkle parmesan on top and serve hot.
