Sweet Potato with Turkey, Prosciutto & Sage

What You'll Need

  • 1/4 cup Spectrum® Olive Oil
  • 1 lb. turkey cutlets, pounded thin
  • kosher salt and ground black pepper
  • 4 oz. sliced prosciutto, diced small
  • 1 cup onion, diced small
  • 1 tbsp. sage, chopped
  • 1 ½ cups Imagine® Creamy Sweet Potato Soup
  • 1/3 cup Italian parsley, roughly chopped

How to Make

  1. In a large skillet heat oil.
  2. Season the cutlets with salt and pepper.
  3. Place in the hot oil, seasoned side down.
  4. Cook for 2 - 3 minutes until browned on each side.
  5. Remove from pan and keep warm.
  6. In the same pan, add in the prosciutto, onions and sage.
  7. Cook for 2 - 3 minutes.
  8. Pour in the Imagine® Sweet Potato Soup and adjust heat to medium.
  9. Bring to a simmer and cook until heated through.
  10. Season with salt and pepper, as desired.
  11. Add cutlets and parsley to the pan. Serve hot.
