What You'll Need

  • 1 3/4 qts. (7 cups) Imagine® Organic Vegetarian No-Chicken Broth
  • 1/4 cup Spectrum® Olive Oil
  • 1 medium onion, diced small
  • 4 cloves garlic, roughly chopped
  • 16 oz. pkg. Arborio rice
  • 3/4 cup white wine
  • 2 cups Imagine® Organic Creamy Sweet Pea Soup
  • 1/2 cup parmesan cheese, grated, plus more for garnish
  • 2 1/2 cups frozen peas
  • 1/2 cup scallions, diced small
  • 2 tbsp. fresh thyme, roughly chopped
  • kosher salt & ground black pepper
  • 4 oz. pkg. crumbled goat cheese (optional)

How to Make

  1. In a medium sauce pot, heat the broth and reserve at a low simmer.
  2. In a large soup pot, heat the oil.
  3. Add in the onions and garlic and cook over medium heat for 1 minute until fragrant.
  4. Add in the rice and stir to coat.
  5. Pour in white wine and simmer for 3 minutes.
  6. Using a ladle, add the Imagine® Vegetarian No-Chicken Broth in 3 stages, keeping it simmering within the rice the entire time.
  7. Once all the stock has been added, allow to simmer until creamy and rice is cooked tender.
  8. Add in the Imagine® Sweet Pea Soup, parmesan cheese, peas, scallions and thyme.
  9. Add salt and pepper as desired.
  10. Cook until heated through.
  11. Optional: Stir in goat cheese or top with additional grated or shaved parmesan cheese.
