What You'll Need

  • 3 tbsp. Spectrum® Organic Olive Oil
  • ½” slices (approximately 3) of one day old Tuscan bread, cut into cubes
  • 1 medium onion, coarsely chopped
  • 32 oz. Imagine® Organic Creamy Tomato Soup
  • 1 pinch red pepper flakes
  • ½ cup fresh basil leaves, torn
  • 1 cup shaved Parmesan

How to Make

  1. In a medium saucepan, heat 2 tablespoons of the olive oil over medium high heat.
  2. Add the cubes of bread and cook about 5 to 10 minutes, stirring constantly, until golden in color.
  3. Line four soup bowls with the bread and set aside.
  4. Return the saucepan to the heat, add the onion and remaining olive oil and cook until onion turns opaque, about 3 to 5 minutes.
  5. Pour in tomato soup, bring to a simmer and heat thoroughly.
  6. Divide the hot soup between prepared soup bowls and top with pepper flakes, basil and Parmesan, serve immediately.
