What You'll Need

  • 4 tbsp. unsalted butter
  • 2 C. onions, diced small
  • 2 C. carrots, diced small
  • ¾ C. diced potato
  • 5 C. Imagine® Organic Vegetable Broth or Free Range Chicken Broth
  • ⅔ C. grated cheddar cheese
  • ¼ C. chopped dill fresh
  • 1 tbsp. fresh chopped parsley
  • Salt and black pepper taste

How to Make

  1. In a medium soup pot, heat the butter over a medium high heat, add the onions and sauté for about 5 minutes.
  2. Add in the carrots and potatoes and sauté for 2-3 minutes more.
  3. Stir in the broth and reduce heat to a simmer until the potatoes are soft, about 10 minutes.
  4. Transfer to a food processor, add cheese and blend until smooth.
  5. Add soup mixture back into the pot and return to a low heat.
  6. Stir in dill and parsley and season to taste.
