What You'll Need

  • 1 small onion, diced (approx. ¼ cup)
  • 1 cup white beans, cooked/canned
  • ½ cup zucchini, diced
  • ¼ cup tomato, peeled, diced and seeded
  • 1 tbsp. garlic, chopped
  • 4 tbsp. Spectrum Naturals® Organic Extra Virgin Olive Oil
  • 4 cups Imagine® Low Sodium Organic Vegetable Broth
  • 2 tbsp. pesto (store bought, high quality)

How to Make

  1. Sauté onion and garlic in olive oil over low heat until soft.
  2. Add beans, tomato, zucchini and broth and bring to a boil.
  3. Stir in pesto, then season to taste.
  4. Garnish with parmesan cheese and serve warm.
