What You'll Need

1 ½ C. orzo

4 C. Imagine® Organic Vegetable Broth or Imagine® Organic Chicken Broth

3 tbsp. unsalted butter

1 C. shiitake mushroom caps only, sliced

½ C. chives, chopped into 1" lengths

Hain® Sea Salt and freshly ground coarse black pepper to taste

½ cup grated Parmesan

1 tsp. Spectrum® Olive Oil

How to Make

  1. Cook orzo according to package directions, exchanging the water for broth.
  2. Cook until just tender. Drain orzo, toss in olive oil and keep warm.
  3. In a large skillet melt the butter over a medium high heat and sauté mushrooms until tender, about 3 minutes.
  4. Add the orzo and chives to the mushrooms.
  5. Season to taste, sprinkle parmesan on top and serve hot.
