Subject : Tuscan Bread and Tomato Soup  

serves: 4




3 tbsp. Spectrum® Organic Olive Oil

½" slices (approximately 3) of one day old Tuscan bread, cut into cubes

1 medium onion, coarsely chopped

32 oz. Imagine® Organic Creamy Tomato Soup

1 pinch red pepper flakes

½ C. fresh basil leaves, torn

1 C. shaved Parmesan


cooking directions

step 1: In a medium saucepan, heat 2 tablespoons of the olive oil over medium high heat.
step 2: Add the cubes of bread and cook about 5 to 10 minutes, stirring constantly, until golden in color.
step 3: Line four soup bowls with the bread and set aside.
step 4: Return the saucepan to the heat, add the onion and remaining olive oil and cook until onion turns opaque, about 3 to 5 minutes.
step 5: Pour in tomato soup, bring to a simmer and heat thoroughly.
step 6: Divide the hot soup between prepared soup bowls and top with pepper flakes, basil and Parmesan, serve immediately.
