Shared Soup Gallery
Ingredients
3 T of Spectrum® Organic Olive Oil 3 ½ inch slices of one day old Tuscan bread cut into cubes 1 medium onion, coarsely chopped 32 oz Imagine® Organic Creamy Tomato Soup 1 pinch red pepper flakes ½ cup fresh basil leaves, torn 1 cup shaved parmesan
Directions
- In a medium saucepan, heat 2 tablespoons of the olive oil over medium high heat
- Add the cubes of bread and cook about 5 to 10 mins, stirring constantly, until golden in color
- Line four soup bowls with the bread and set aside
- Return the saucepan to the heat, add the onion and remaining olive oil and cook until onion turns opaque, about 3 to 5 minutes
- Pour in tomato soup, bring to a simmer and heat thoroughly.
- Divide the hot soup between prepared soup bowls and top with pepper flakes, basil and parmesan, serve immediately
