Hindustani Gaspacho (Cold Indian Gazpacho)

Ingredients

6 large tomatoes
1 large red onion
1 large green bell pepper
1 large red bell pepper
2 bunches of radishes cubed
3 large carrots
3 large celery
2 medium size cucumbers with skin on
2 fresh hot green chilis
6 cloves of garlic crushed
2 T olive oil
½ cup tomato puree
5 ½ cup Imagine® Organic Vegetable Stock
1 ¾ cups dry red wine
Salt to taste

Directions

  1. Process all ingredients together in small batches in a food processor
  2. Serve chilled
