Golden Cous Cous with Imagine® Organic Free Range Chicken Broth

Ingredients

6 cups Imagine® Organic Free Range Chicken or Vegetable Broth
¾ stick unsalted butter
3 cups chopped onion
2 t turmeric powder
1 t ground cumin
3 cups cous cous
2/3 cup slivered toasted almonds

Directions

  1. Bring broth to a boil in a medium saucepan and reduce heat to low. Cover and keep hot.
  2. Melt butter in large saucepan over a medium heat. Add the onions; sauté for about 8 minutes until light and golden.
  3. Add the turmeric and cumin, stir for 1 minute
  4. Add cous cous and stir to coat with onion mixture
  5. Stir in hot broth, and remove from heat
  6. Cover and let stand until broth is absorbed, about 10 to 12 minutes. Fluff couscous with a fork.
  7. Season with salt and pepper, transfer to a serving platter and garnish with toasted almonds
