Braised Endive

Ingredients

½ stick unsalted butter
3 large Belgian endive, halved lengthwise
1 cup Imagine® Organic Vegetable Stock
Coarse kosher salt and coarse black pepper to taste

Directions

  1. Melt the butter in a large skillet over a medium high heat
  2. Add the endives and brown well on both sides, about 7 minutes
  3. Add the vegetable stock and cover with a lid
  4. Reduce heat to low and simmer for 30 minutes
  5. Season to taste and serve immediately
